I realize that the time I took away from my site might make this answer untimely for you. Nonetheless, if you're coming from Illinois on I-80, it's relatively easy.

By the time you get to Salt Lake City on I-80, you'll have already traveled through the steepest mountains you'll encounter. These are the Wasatch Mountains directly east of Salt Lake City.

Head south from Salt Lake City on I-15 down to I-70. From there, you can head to Moab (Arches) and to the other parks from there. Taking this route will help you avoid most mountain driving although you'll still be at high altitude.
